Thanks for all of the informative replies. Since i started with 6.5 gallons and have 5.7 or so gallons in the fermenter, I'll start off with 6 next time.
Just finished my fourth extract brew. Been doing full boils, starting with 6.5 gallons. Problem is, my OGs are coming in low. Just did a porter which called for 1.065 OG. I came in with 1.058-1.06 ish.
Is it better to put in less water at the beginning and add water if u over shoot the OG...

I know that most beers do need to be refrigerated, but I'm wondering about high alcohol beers. I've been buying alot of special releases lately, most of which are in 22oz bottles and higher than 10% alcohol. Running out of refrigerator space!!!
I've got a 10 gallon brew pot and plan on doing mostly full boil, 5 gallon batches once I get a chiller. Most commonly, I see immersion chillers in two lengths, 25' and 50'. Which one should I get??
It's a 5 gallon bucket.....didn't know anything about blow off tubes when I started, but I can see the need for one so I'll take your advice and do it next time.
