I've heard brisket is hard not be cause of the meat but because each brisket is different from each other and that two identical in weight briskets cooked side by side will be different. One may be awesome and the other so so.

The wife smoked two 14lb turkeys today. Cooked at 250 for 6 hours when the breast and thigh were both done.
She's smoking two more tomorrow for left overs.
She has mastered stuffed bacon wrapped jalapenos.

I did not smoke today but I did months ago. I took the leftover butts (smoked four ate one) and wrapped with heavy foil making sure to remove all air pockets and froze in deep freeze.

I do not smoke turkeys. Every one I have eaten taste like Ham. Got nothing against Ham but I don't want my turkey to taste like Ham.
I am guessing you are looking for the smokiness to be in the fried turkey. Maybe you could use smoke flavoring in your turkey brine/injection.
