After reading their web page in thinking they don't. I do know it's a common practice for commercial breweries in Germany to bottle this style with lager yeast. Something about the way it carbonates.

I'm tempted to try it and smell it as it ferments. I can tell different yeasts by smell. My only issue is that if it is a lager yeast I have never used one before (not yet lagering.) I would guess I could still tell the difference though.

So I have 2 bottles of this Schwabenbraeu Das Weizen Hefe Hell brought straight fresh from Stuttgart Germany. I was wanting to make a yeast culture from it but am concerned that they might use a different yeast for bottling making the sediment on the bottom useless for making a hefeweizen...

Thanks for all of the great suggestions! She's not a big hops fan and I do agree that it can leech into the supply. I like the bitter route as well. Here is my current idea. Any tweaks or suggestions to additions or omissions would be great!

WTF is this??? The big alien blob in the bottle as well as the little slick part at the top? Should I dump the batch or just the bottle? That's the largest one. There are 2 more in my batch that have smaller ones in them. FYI This is a Bavarian Hefeweizen.
Brewing now... Second AG I have ever done. Heck its like the sixth batch total lol. Wish me luck! Scaled it down to 5 gal batch (well 5.5 to account for some trub loss from the pumpkin.) LHBS didn't have the yeast so I had to use Wyeast American Ale. Whole house smells like thanksgiving!
Well I did it! Got a starter equipment kit and ingredient kit from my LHBS and gave it a whirl. I made a couple of mistakes (put in bittering hops before the hot break) but have a good feeling about it. SG was dead on to the kits instructions! here's to hoping the batch works out!
