You could have a decent cider by thanksgiving IMO. Ferment 3 weeks condition 2 weeks and chill for any remaining time. You could try priming with brown sugar malt extract or honey. I think it would help give a lil sweetness body and flavor to it since after 3 weeks of fermenting your cider might...
And as for changing the process. You can secondary as planned. Having no water in your airlock makes no difference as far as that goes just personal preference
I don't see much issue as your airlock probably has a little plastic cap on it and co2 has been pushing it's way out most of the time :) yay don't worry! Fill with water starsan and water or vodka and then drink beer!
Def don't want barley wine! And I will change the hops around like you suggested. Already bought the crystal. and lme so I've got to stick with those. Though I don't need to use all of it.
I guess an Imperial ipa. I would like it to be hoppy and strong. Shooting for around 100 ibu and 9 % abv. But I really have know idea what I'm about to create!
