    40 quart, 5 gal batch. Sat the kettle in a sink full of ice and water and stirred constantly. 20 min. But I still want a SS wort chiller.

    I cooled my wort in a stainless steel sink with 99 cents of ice and it was at 78 in about 20 minutes. Color me stupid but does it really matter about the metal. I like the ease of cleaning with stainless. BTW, my beer is better than your beer.

    Forgot the yeast.

    Yes, I have control of the temp. This is an ale so that is why, (my brew meister told me), it is at 68-70. I can easily turn it down.

    Thanks. I went ahead and put in the yeast the next morning after shooting up out of bed at 6 am. About 12 hours later we had a rolling boil. Already put it into the incubator at 70-68. This may be our best batch ever. I'll let you know. BTW my " incubator" is named " BIG MOMMA " in honor of...

    Forgot the yeast.

    Dumb, dumb, dumb. Too many cooks in the kitchen and I forgot to put in the yeast. I aerated the wort with O2. Put the yeast in the next morning. Did I really foul up?
