    Can I save this batch?

Yeah I think you're right. I just blindly switched Wyeast 2565 with WLP029 assuming they'd have the same tolerance. The funny thing is I've made a few batches of Kolsch with WLP029 at the same 60F temp without issue. Anyway, by accident, I left the sample I pulled yesterday out all night in the...

What no one wants to say

Exactly. To me this is the biggest factor impacting sales and the hobby. It's a generational thing, and kids just aren't interested. And when they DO drink it's in moderation and it's more likely to be canned seltzers or ciders than craft beer. I've seen the craft beer section in my liquor store...

    Can I save this batch?

This is a first for me - I brewed a batch of Kolsch on Monday. It's my go to recipe and I've made it countless times with no problem, but this time, 3 days in there has been absolutely no airlock activity so I took a hydrometer reading, and the OG hasn't budged. Using copper to remove sulphur

I’m currently fermenting a batch of kolsch that I used WLP003 instead of my usual yeast. As predicted this yeast has produced a fair amount of sulphur smell. I know that it will dissipate with conditioning but I need to serve this beer about a week after carbonation. I have read that copper will...

    Persistant infection

Everything is back on track! I think of done 3 (maybe 4?) batches since then and all were fine. I actually brewed again this past Sunday - feeling good that I rectified the problems.
