    Lazy smoking today... Meatloaf for the week, didn't even soften the veggies before mixing and forming loaves 🤨 Still delicious, especially with the sauce/glaze over the top! The foil pack has the last beef cheeks for lunch and the garnish is dried dill from the garden 😉

    Doing beef cheeks for memorial day weekend. Taco's with barbacoa meat and... Kimchi!! Pre flip pic after two hours @300° and post flip pic for two more hours at 250°. Then it's on to the braise in the crock pot for 4 more hours (stock and tallow liquid) 🤠😍😎

    Szchezuan chicken in my new Weber kettle cast iron wok on a screaming hot coal bed... Added more fuel for a slow cooked chicken at 250-275° for a couple hours 😄

    I've never found much flavor in a liquid brine, not that I've tried more than a handful. They are always lacking in flavor to me. I really like the dry rubs and finishing glazes/sauces much better.

    On vacation and visiting the great town of Charleston SC... Of course I had to visit the famous Lewis BBQ for lunch! Had the sliced brisket and Hot Guts sausage with collard greens... Really, really delicious 😋

    Woke up to rain, thunder and lightening (not in that order!) so I didn't get the brisket on until 11:30am when the weather cleared up.

    Starting to trim this brisket... Also going to render the fat and prep the meat scraps for a Texas style chili recipe. Busy day with kitchen duty 😀 😉 Forgot to mention I'm making a master stock also...

    Not quite that much but did breakfast tacos this morning and the leftover ingredients are being reused in a stuffed, baked sweet pepper dish for supper. Along the way I'm making two meatloaves for smoking on the Weber kettle to use this coming week as I've found it easier to cook on the weekends...

    Tomorrow is the day I break in my new Pit Barrel Cooker with three racks of ribs (2 spareribs and one beef back ribs)... It's the PBX so it can hang twice that many!

    Second cook on my Weber kettle (22") and did chicken and pork belly... Hard to control temps as the ash sweeper assembly is complete trash and need to find a way to cut off the rusted hexnut holding it in place.

    Almost pulled the trigger on this bad boy! When I looked at it though it was waaaayyy bigger than I thought (it's the PBX, for Xtra large) and I don't know if I will need that much space... But the price is excellent 👍 ... Welp, I stewed on it overnight and made the purchase this morning!! Too...
