    I keep that yeast (WLP320) at 65 or below and can't detect any banana or clove esters. It will produce a nice cloudy wit. Keep your abv down and IBU about 20 and that will make a nice summer wheat.

    How much yeast for a 2.5 - 3 gal batch?

    I brew in half batches. Here's what you do. Make a 1L starter. When you go to pitch, save 6 or 8 oz of the starter and pitch the rest (search for the many ways to store, bottles, jelly jars, etc). On your next batch, you can use what you saved to make another starter and repeat the process.

    Kinda what I figured. I'll check the gravity and see where it's at. I also have a 6 gal glass carboy I could use as the secondary, but I prefer the smaller bottles because of less transfer loss and I really like the geometry of the bottom of the better bottles for minimizing losses.

    Carbonation

    I haven't been doing this long, but sounds maybe like loose bottle caps. Any possibility that the weight of the top case put enough weight on the bottle caps of the bottom case to let some carbonation build up even though the caps were loose?

    Aside from the arguements of plastic vs stainless which is surely covered in many other topics, anyone here use(d) these before 15 gal conical $155 or 1 bbl batch size 60 gal conical also $155 Seems like you could easily drill the top for your airlock/blowoff of choice.

    Electric Guru Help Please

    Interface the heater out contacts to a relay with 20A rated contacts. Head down to an electrical supply store and tell them you need a single phase contactor or relay with 20A rated contacts and a 120VAC coil voltage. Piece of cake.
