No love for Riwaka? I've done 1:1 Nelson and mosaic which was delicious and the best beer I've brewed.
Was thinking about going citra, Nelson, Riwaka 2:1:1 in my next neipa (in about 4 weeks), but concerned that nobody seems to use Riwaka.

Wy2000 Budvar has been my go to lager yeast. Sadly it's no longer available.
I tried WLP 802 and wasn't overly keen on the result.
Does anyone know something similar to the Budvar strain?

Hop additions are too early imo.
Use more hops later on and get more flavour and aroma fro them.
I use around 400g in a 21 litre IPA. So would add a bit more on top for a dipa.
For your batch size I'd go at least 200g probably leaning towards 300g.

I'll second Nelson sauvin. Blends really well with mosaic imo, used the two of them in my last neipa. Was my favourite beer to date. Wish I still had it on tap.

The 2 things I've personally had ruin beers are sanatation and temperature control. One caused a Brett infection (actually think this will turn out grand) and the other caused solventy flavour I the beer and wasn't nice.

So in a couple of weeks I plan to brew a RIS for drinking in the winter (from nz so we're about to head into summer).
This has made me think about brewing other winter beers that need ageing and logically I am thinking of a barleywine.

For IPA and pale ale I really like Nelson and Galaxy. Both are overly fruity hops. Nelson I use from 20 minutes onwards, Galaxy I use for whirlpool and dry hop additions. Riwaka is another nice hop to use late.
