What did you set your roller mill to?

I have never seen anything I would consider even decent for GF out there. I'm around philly as well, is there some place out of the area i can try some of these?

For the past couple years i've been using a Nutra Mill, works great for making flour, but i'm tired of the stuck sparges and 14 hr brew days. I am doing my first all millet mash using a roller mill. I have the barley crusher (I bought it for my brews but then my wife was diagnosed as celiac.)...

I'm not sure if this is an obvious question or not, but do you use hulled or unhulled buckwheat?
