I want to make my first wine kit.Can I use star san to sanitize my primary for my reisling that I want to make .The kit also says to add sulphites but It only came with one pack and also says to add at bottling time.Do I need more?Are there any good books or online tutorials on wine making

its 71 in the room and I used muntons dry yeast.I made a starter and it bloomed fine.T his was my ftrst batch ever and I'M pretty sure the wort was above 80 when i added the yeast,rookie mistake.Besides that it tases fine.
I went back and looked at the instructions.I didnt notice till now that the sg/fg were on the top right hand corner.my final is 1.012/1.015. It hasnt changed in 4 days is this normal?
