    2.75 gallon AG Irish Red ale. 1.059 OG. Nottingham dry ale yeast pitched at 66* wort temp.. 24 hours later it’s full steam at 72*. Had to swap out airlock for a blow off tube and the beer in the airlock smelled foul. Beer has stable temp now at 71*. Manufactures packaging says ideal up to 72*...

    So I pulled a hydrometer sample and it’s right at 1.030. Pretty sure it’s done after only 3 days but I bumped the temp up to 70*, gave it a swirl, and gonna check again in a week or two. I believe the high mash temp is the issue and not my beloved yeast. Hopefully it’ll drop a few more points...

    Thank you all for your responses. A quality pH meter will be purchased in the near future. I bought a cheapo one off amazon and I couldn’t get it to calibrate so I wrote it off as a $14 loss. lol You wouldn’t regret it although I do miss the luxury of a supermarket

    How long grains keep

    I'm curious to how long cracked grains will last too. I have a 5 gallon brown ale recipe with the grains already cracked. I ordered offline about a year ago before I had a grain mill and it's sitting in my 10 gallon igloo unfinished mash tun.
