Overshot my gravity (again), should I top up with water???

Thanks! I usually do back off on NB's grain bills by 10% or so, but forgot about it this time. I'm going to add .7 gal to hit the OG target. Thanks. Brobe

Overshot my gravity (again), should I top up with water???

I usually have problems with blowing past my gravity target and today did so again while brewing NB's Plinian Legacy. The recipe is for 6 gallons with an OG of 1.070. Due to the massive amount of hop in the brew kettle I could only pull off about 5 gallons, but current gravity is 1.079. I've...

    Straight Lambic (Unblended)

Finally brewing again tomorrow and plan to do this as batch #2. Did you use one oz of hops? I just realized there is no qty specified. I am going to pitch dregs from a Cantillon Gueuze tomorrow and will add from Tilquin and others over the next several months. If it goes well I hope to blend...

    Straight Lambic (Unblended)

You've peaked my interest. This is next on my "to brew" list. What commercial beer would you compare this to? I' recently gueuze obsessed and ultimately am aiming to re-create something like Gueuze Tilquin, which I suspect will not be easy. Regards, Brobeman

    Goose island

I love this brewery. All their high volume brews are solid, bit I confess to not normally drinking the Honkers and 312 styles. On the other hand, the Bourbon a County bottlings, their sour fruit beers (Juliet, Madame Rose and and especially Lolita) are some of the best I've ever had. I also...

Revolution Brewing Cat Herder Replicale Clone. Need help

We visited Revolution a few weeks ago and tried their Cat Herder Replicale. This year's Replicales used 100% Czech Pils for the grain bill and Revolution had the good fortune of drawing Citra to round out their SMaSH brew. The beer turned out phenomenal. I reached out to the brewmaster and...

    Drunken Sailor, reporting

Hey Nuke, I've seen your posts here and assumed you were a sub nuke. Not too many surface ships in Groton the last time I was there. Former ET1(SS) nuke myself. Got out after 9 yrs and a tour at NFAS back in 98. Never any regrets, but I did have some good times back on the boat. That said...

whats the worst brewing accident you have witnessed or been a part of?

Miller bought the naming rights to the stadium of my beloved Brewers thereby ensuring a decent beer can never be consumed within. Top that. Regards, Brobeman

Rodenbach clone not taking off. Help!

I talked to one of the guys at the Northern Brewer in Milwaukee and he had a suggestion that sounded feasible. He suggested brewing a very small beer and pitching the rosalare into primary, aging the two beers in parallel, and blending them in the future. Sounds like a good idea, but does...

Rodenbach clone not taking off. Help!

Thanks for the recommendations. I know these beers take a long time but had no idea it takes for a pellicle to start to form. What do you recommend for temperature? Is 68-70f high enough or should I get a carboy heater? Thanks, Brobeman
