    So, I brewed some black tea, added sugar and poured it all into the Arizona container. It's now about 3/4 full and sitting on the kitchen counter. Going to leave it there for a while and watch.

    Nice....after a few days, the yeast will be so active that you'll get a "current" flowing. When my batches are in full action, the cinnamon stick will actually drift around from side to side and top to bottom and swirl around the carboy.

    Yup, this is fine. I've done many batches and maybe 1 or 2 didn’t separate. The rest have all separated no matter how well they were originally shaken. The yeast will power right through it. It's actually pretty cool to watch the yeast make it's way down and get to the honey as it progresses...

    Agreed. Although it smells very much like sake, the taste of the end product using jasmine rice and yeast balls is much better than the sake I've had.
