    You know, I've never had the pleasure of trying Epic's pale ale, so I looked it up after you posted this. I must say, that is a ton of cascadey deliciousness in a pale ale -- that's hopped like a California IPA. Like whoa. I'd bet its amazing.

    Was my first hop as well, in a somewhat misguided Brewers Best Scottish 60/- but I still really enjoyed it. It led to another Scottish strong ale that was aggressively hopped with cascade and it was pretty darned tasty. Really fun beer, I should do that one again :)

    WLP530 - Know it, fear it!

    Just prepared a starter of this, looking to get it into a 1.090 quad. Should be awesome. The 1.065 dubbel is brewed with it turned out great and it went off like a bomb. The quad will likely cause damage. Just going to go with a blow-off tube immediately this time.

    I think that's an overstatement of splash racking and its effects. It's standard practice in the wine industry to kill sulphur. And when it comes down to it, a little bit of oxidation is way less obnoxious than sulphur, providing you don't get an infection.

    I'm so glad this thread was resurrected! I'd been in a bit of a beer rut. I went out and bought a four pack of Hop House and I'm going to get a Blonde going next week. I'm thinking just Pilsner malt, some noble hops and Ommegang. Really see what this puppy can do :)

    Yep, I have a terrible habit of wasting a perfectly good beer 10 days or so into bottle conditioning just to see how it's coming along. Beautiful thick lace on the pale ale, tastes green as expected but overall it's way cleaner than I thought it would be. Will update in a week.

    I got a lot of sulfer as well, I splash-racked it into the secondary and that dispelled most of it. I dry hopped with two more oz of Mosaic and now I get some phenols, esters and mosaic hops off the airlock. Will report back.
