    Any tricks to bitter an under hopped irish red thats way too sweet

    I have used Hopscotch - which is an isomerised hop extract to correct this sort of thing in the past. It is pure hop bitterness so will not enhance hoppiness but will solve the low bitterness. Hopscotch was produced by JRM Products, Haddington, Scotland.

    IPA brewed by son Alistair on our 100 litre home brew rig. Nice balance with just the right amount of bitterness and after hop. Someone taught him well... Cleaning equipment today for last brew before Christmas tomorrow.

    The most common reason for thin beer is not enough calcium sulphate in the brewing water and if you are mashing at a higher temperature to retain residual sweetness and still need more sweetness consider using calcium chloride.
