You're on the right track with European varieties: they are typically not as voracious as Anerican varieties. That's a TON of roast in your original recipe. I would consider backing down your roasted malts a bit and maybe adding some more 80-120 crystal malts. Are you wanting milk chocolate flavor or more bitter chocolate.

All good advice, just be aware that 1# per 5 gal is about the upper tolerance of volume before sugar starts imparting some cidery qualities

1065 and 1272 are both great choices, just be sure to make a big starter.
