    Better Bottle leaks

Hi All, I've been using a 5-gallon Better Bottle for primary fermentation for about 10 batches now or so. Last night, when I poured the wort in and was about to pitch, I noticed precious brown fluid pooling underneath the bottle. Sure enough, the Better Bottle was leaking, as I later...

    Hooigan Brown clone

Hi Everybody, As I write this I'm sitting at Portland airport on a long (unintended) layover. But the silver lining is, I've used this time to discover Hooligan Brown Ale, by Portland's Laurelwood Brewing Co. Which is delicious! Does anybody happen to have a recipe for this (preferably...

    Honey Kolsch

Yeah, light LME would've been my guess. Thanks for posting, and let us know how it turns out. I once made Papazian's Kolsch, but felt it lacked "something." I'm hoping you've found the right something here!

    Honey Kolsch

Oh man, just the words "Honey Kolsch" got my attention. Would you be willing to post the recipe?

contamination - how bad is this?

Thanks for the discussion, everybody. As always, the answer seems to be, if it smells like beer and it tastes like beer (this does), then it must be beer! I'm glad to have learned about the yeast islands, too.

contamination - how bad is this?

H All, I've had an American pale ale in secondary for just about two weeks, so it's time to bottle. When I went to check on it this morning I found - horrors! that the plug had come out of the carboy. This couldn't have happened more than a day or two ago, yet already there are little...

    body building

Hi All, I recently brewed an extract clone of Dogfishhead's Raison D'etre for some friends who say it's their favorite kind of beer. They told me that the flavor was exactly right, but that it lacked the "body" of the original. So, question: is this likely an extract thing? Will I...

    Belgian yeast

Here you go. The recipe is based on the one in Radical Brewing, but I swapped in demerara for candi sugar: Fermentables 8 lbs light dry malt extract 4 oz. Crushed 40-50 L crystal malt 8 oz. Crushed light chocolate malt 6 oz. Pureed raisins 8 oz. demerara Hops 1/2 oz warrior hops, 15% AA (30...

    Belgian yeast

Don't know if anybody still cares, but man, Oldsock nailed it. I just opened this Raison D'Etre clone after three weeks in the bottle. It's very drinkable, has the right raisin kick, I think, but there's definitely a little banana flavor. But not in a bad way, like a bacterial infection...

    Belgian yeast

Hi All, I brewed up a clone of the DogfishHead Raison D'Etre, from the recipe in Radical Brewing. However, my LHBS did not have the Wyeast strain 3522 that was called for. Oh, well, what the heck, how about another Belgian strain? So I picked up Wyeast's 1214 instead. Question: What can...

    First brew!

I've recently become a fan of racking after seeing how clear my Kolsch has come out, but for a brown it may not make so much of a difference. However, to answer your original question, if you want to go to secondary, trust the gravity. If it's constant for three days in a row, go for it...

    Ignorant newbie poppet valve question

    Thanks. Will do.

    Ignorant newbie poppet valve question

Hi All, I'm about to join the wonderful world of kegging, which I've heard so much about. My used corny arrived just yesterday, and the company thoughtfully included new gaskets. When I went to install them, however, I found to my surprise that there were no poppet valves in the fixtures...

    Please help in satisfying SWMBO...

Same issue here - SWMBO "does not like beer." I brewed up a batch of the "Itsok Kolsch" in Papazian's book, and turns out she enjoys it. It was even hit with her mother.
