    For what its worth im on a stir plate and add 1/8teaspoon of nutrient to boil. My starters are peaking brew day morning. If i stop the stir plate i dont have any signs of activity. Ill let it sit on there today to confirm thats the case but things arent looking good at the moment.

    Looking for advice on house apfelwein/cider.

    I've got about 4 jars of 3068 in the fridge, maybe next batch I'll give that a whirl. Do you think .5 gallon headspace in a 5 gallon bucket will be ok for this yeast? I've only used it twice; once it blew out with 1.5 gallon headspace in a 6.5 gallon bucket, the other time it didn't.

    Jamil's Irish Red with Rahr 2-row?

    For what it's worth, I'd like my "house ales" to be Jamil's Blonde, Irish Red and Heffeweizen; all styles I love. As for hops they just need bittering so I'd use cascade to cut down on costs. If you can't tell already my goal is to cut costs and let the beer flow like water. :drunk:
