I brewed this recipe on April 04. When I got home from the lhbs, I realized I had purchased 3 lbs of light/pilsner DME instead of Briess Bavarian Wheat DME... I went ahead and brewed with the light/pilsner DME.
I also mistakenly pitched too warm at around 90F...
Just brewed this yesterday as a BIAB, my first attempt outside of extract brewing.
Hoping it turns out ok, the brew day was rough as I messed up on a few steps, including rehydrating my yeast in 100+F water. I quickly cooled the glass down in a water bath and there was activity from the yeast...

I tasted my belgian dubbel (NB) when racking to secondary and it tasted like you described. I was worried but figured it would all work out in the end. Now I cant wait for it to be bottled conditioned and ready for drinking!

Thought I would share from my experience. I bought 100 grams of synthetics caffeine from PureBulk.com while in school, it is very very very bitter, even when using the equivalent of 100mgs caffeine.
