1. When I add fruit, should I shake the wort and wake up yeast?
I'm worried that yeast cake couldn't ferment.

I'm fermenting my sour wort now and add pineapple in here 4 days later.
This is 5 gallon recipe cloning tepache(sweet pineapple &cinnamon juice) and the amount of pineapple puree is about 5 pound.

Normally brewers make yeast starter before bottling with liquid yeast.
But I don't have DME to feed yeast and even If I make the starter, I should carry yeast bottle to the brewing place(I don't brew in my house.)
So I just want to use dry yeast simply...
