Well it's been some time since I first tried to make this brew , Now with better equipment & brew knowledge I'm going to make a batch today.
Got a feeling going to finally put a nail in the coffen on this clone this round .
Thanks to everyones useful insight here .
I got about 100 lbs of apple to press
A friend of mine suggested using a burlap sack as filter bag.
However there is a lot of loose fibres with the burlap sack I have, which im afraid will get into the finish cider . I could re-filter the cider through a t-shirt or something.
Just wondering if...
Im new to wine making let's start with that
I was told that with white wine it's best to cold crash, long story short I did not set up my temp controller properly and I froze my 5 gallon carboy, wasn't planning to freeze distill.
My question is when ever it thaws out will it still be good to...
I just use a 3/4 rubber stopper
-drill a hole through it to insert my thermometer .
-drill a hole in my cooler slightly smaller then the stopper and wedge it in
This is right out of John palmer how to brew balancing p.h and mineral. This has helped me greatly , specially with dark Beers

Thanks for the feed back , I've never seen this happen before so it was a surprize to wake up to.
And skraeling do you know how hard to it to clean dead hooker out of a carboy. Their hooker boots are the worst its like using a plastic bag to get a bung out of the carboy.
Just made a pilsner
6.6lb pilsner malt
4.4lb 2row
3 lbs of corn maze
Double decoction
60min boil /hops
Pitch wyeast 2124
When I woke up this morning I notice this odd cloudy material floating just under the top.
First time using corn maze wasnt sure if it cause this .
Thoughts ?
