    Thanks for all the feedback guys, this definitely helps. Maybe I'll put them in an ice bath instead of the fridge. And I won't re-seal any beers :)

    I'm definitely planning on keeping two bottles for a few months to age. I would still keep them in the fridge though right? As for testing, you can't really open a bottle to test for carbonation and if it's not fully carbonated re-seal it and let it finish?

    Makes sense, I was thinking of putting it into the wine fridge for a few days. As for the carbonation, there's no easy way to tell if it has finished that process right? I can't just open a bottle to test b/c I only made a gallon batch and don't want to waste too much...

    Just took another reading (two days after the first one) and it's still 1.020. I'm hoping this is FG or is there a possibility that my fermentation stalled b/c of the initial 80F I had in my carboy for a while?

    Makes sense, I'll get a hydrometer this week then. More out of curiosity, is it possible that the yeast stopped fermenting because I went from my initial 80F to low 70s and it didn't like the rapid temperature drop?
