I stepped up to a 2.5L starter over a 2 week period. Fermentation took off after. 4 hrs. Saved a small qty of the yeast in a mason jar

100% Brett B Trois (wlp644) pale ale after 2 days in primary. At first it was covered in about 3 inches of sacc-like krausen. Now it is half krausen half pellicle

I will probably use WLP001, as I want the yeast character to be minimal in this beer and yield to the hop and malt flavors. OG between 1.07 and 1.08, IBUs 40-60. Im going for more of a balanced to slightly bitter APA/english IPA finish. I may skip buttering hop additions entirely and go w/ all...

How did the light Munich smash turn out? What hops did you use?

Which of the following malts would you use as a base malt in a smash IPA/APA? Optic Pearl Maris Otter Halycon Vienna UK 2 row American 2 row Golden Promise Light Munich I will be pairing the malt w/ Nelson sauvin hops :rockin:

i'd be interested to hear how that turns out and how that malt compares to maris otter.

what is ESB malt? i'm thinking either vienna, maris otter or light munich as a base. i probably wont make up my mind till i get to my LHBS. going to brew this in a week or 2. I've used nelson 3 or 4 times and it is always excellent
