    I brewed a pale ale using cascade hops for brewing and flavor. OMG! Tastes pretty darn good. Nice malt and orange flavor balance.

    Bry-97 not doing anything

    Contrary to what alot of people say, I have been hydrating all my dry yeast 30 minutes. before pitching in a half cup of room temp water. Smells like hell, but once I pitch I hardly ever notice too much lag.

Me personally, I don't mind the occasional IPA -I will settle for maybe 1 when visting craft brewers- but I truly prefer the toasty roasty nutty chocolatey flavors of my brews with enough bitterness to balance them out. I guess I'm not too much...

    How bad did i mess up fermentation? High temps on my IPA (100+), 85+on my porter

    Mmmmmmm I actually bottled a Chocolate Porter a week ago. Cracked one open last night and it was simply amazing. Gotta love a good porter.

    Funny thing is that I fermented during the summer with the bucket sitting in the corner of the kitchen. Since those initial batches I built a temperature controlled chamber which keeps temps down in the 64 degree range. As for the carapils, I'll try a 1/2 pound to next time I brew and see what...

    Yeah it's dextrose from my LHBS. And I also use the online priming calculator. As for the specialty grains, one kit used 40L and the other 60L, according to the spec sheet. What % of carapils should I use?
