I use stevia (Target has a generic version(Market pantry)), and for us, it takes 2 cartons (9.8 oz each) of the stevia to sweeten a 5 gallon keg of root beer for our kids. I force carbonate, so not an issue of fermenting.

I use a 1 gallon plastic bag after I open it, as well. I keep it in a cabinet in the garage with my other brewing supplies. Have not had it get hard there.
If you just want to add the sugar because it was missed before, you could boil it in some water, cool, then add it to fermentor. As previously mentioned, will alter hop profile, however if it was supposed to be there in the first place, should be okay, right? I know on Brew strong they talk...
Will be brewing this on Friday. Look forward to everyone else's results. Brewing 10 gallons. Using 2L starter (or whatever MrMalty.com rec's) for first 5 gallons, and then 2 (think MrMalty.com said 2.7 vials) vials for 2nd 5 gallons. Will be interesting to see how the 2 different one's turn out.
Will be building one this weekend, in anticipation of brewing a Firestone Walker Union Jack clone next Friday (care of Can You Brew It). Will definitely help with decreasing the hop sludge!
