    I perfer crown caps that don't have paper on them like Stone Brewing bottles. Easier to just toss them in the dishwasher for cleaning.

    the olive oil will make a nice sealent from bacterial you could ferment it with out a lid!!!

    I do for bottles, then store them in boxes - Sanitize before filling them and away you go!

    Deffinitly wait out the 7 days before opening for safe measure. Today you should see more activity. when you do open it, you'll see what is left of the fermentation foam residue on the side of the bucket - thats a good sign. If you notice little to none of that you have a bit of an issue...

    Grain Storage Question

    Does light affect the uncooked/cracked grain? I think it might with the sweating process. I would not store cracked grains for a prolonged period of time. and if your storing I would choose a bin that doesn't easily let light through. just 2cents though not proven or disproven :) Slink
