Just joined the forum but been brewing a while and I seem to be mad on just 3 whether brewing or drinking! Chinook, Citra, Cascade I've even gone a bit extravagant and have plans for a couple of super hoppy late-boil-hop only brews just to see how much of their flavour I can get :)

I knocked up a dark ale recently and started by forgetting to take into account my lower boil volume so the brew isn't anywhere near as hoppy but still seems to taste nice. The weird thing is that after pouring it into a glass, it develops a flat clump of just off white sediment. The other...
