Best way to dry out a beer thats already in the keg?

I made a St Bernardus ABT 12 clone, following the recipe in the 250 Clones mag. I let it sit for about 4 months, so I just figured it was done, I kegged it without taking a gravity reading (dumb I know). However, I think the yeast I got was too old, and the beer ended up way too sweet...

Is Guinness Draught the most "sessionable" session beer?

I completely agree. I been asked before "if you had to choose just one beer to drink forever, what would it be?" my answer was guiness. I think it is the best session beer, and it takes a LOT of them to get old IMHO. The fact that it is low in calories and alcohol is just a bonus (for a session...

How to improve finish? That last flavor at the back of your pallet after you swallow.

Cool thanks, I will try this again soon. This time with a big, correctly done yeast starter, higher mash temps and maybe try a little lactose too. Thanks!

Scored an antique glass carboy today!

Is it thick or thin? I had a pretty old one and it was surprisingly thin. Mine was probably 40 years old... I ended up breaking it :(

How to improve finish? That last flavor at the back of your pallet after you swallow.

I recently made a Founders Breakfast Stout clone. Last night I was finally able to try the real Founders Breakfast Stout. My homebrew turned out pretty good, but not as good as the real founders, I'm looking for advice on how to improve it. Below are my comparison notes: allroadcole's on the...

Question about how long to age a Belgian strong ale and clove flavors...

Hello homebrew masters. I brewed up a strong Belgian ale extract brew 6 weeks ago. It sit in the primary for a month, two weeks in the secondary so far. I tasted it today and the first smell/taste had a very strong sort of black licorice/clove/astringenty flavor (sorry for the all over the...

HUGE yeast cake. Should I make up the lost volume with water?

I do try to keep the covered, but sometimes I leave the boxes off (when we have company over or something, the boxes dont look as cool as the carboys). However the beer never gets any DIRECT sunlight in that location. Is a little ambient light ok?

HUGE yeast cake. Should I make up the lost volume with water?

I will wait and see, although a day later it looks the exact same. We will see. I put the carboy boxes over the carboys during the day ;)

HUGE yeast cake. Should I make up the lost volume with water?

Yeah, it is a small, old building with a lot of stuff packed in. And the grain mill keeps everything pretty dusty. And the owner can seem pretty unenthusiastic (he just seems that way, but is really a nice guy)... But they do have a pretty good supply of quality ingredients and equipment and I...

HUGE yeast cake. Should I make up the lost volume with water?

What didn't you like? Just out of curiosity... It is the only brew store I have been to so I have nothing to compare it to. But it seems nice enough to me.

HUGE yeast cake. Should I make up the lost volume with water?

interesting, that is very similar to how mine looks (my pictures are not as good!). I guess it is good news that it still taste good, but bad news that you only got 3-3.5 gallons...

I hope you are right, and no, I just pitched a 1/6 gallon yeast starter (that was still active).
