    It will be the temp of the fermentation. Usually the temp of the fermentation is warmer than the air around it because of how hard the Yeast is working.

    I add one can of raspberry puree from the homebrew store per 5 gallon batch of a blonde ale. Comes out great. Just rac to a secondary and add the puree. let it sit for another two weeks then keg or bottle.

    Kegged a Smoked Porter. Brought the temps down to 40 and then set the regulator at 30psi. waited 48 hours and then reduced the pressure to 12 psi. when we were drinking the keg it was flat for the first half of the keg and then the second half was over carbonated. It was like a night and day...
