Last 2 times I've tried to brew a Strawberry Wit or Blonde, the strawberry flavor came out a bit sour and lacking the berry sweetness. One of my favorite fruit beers is Abita Strawberry. Even though it's a lager, the strawberry flavor is just right, not sour.

Just came back from 3 days of Xmas vac to find my blowoff tube blew off the top of my 10gal. ferm. Not sure how many days it was exposed to open O2 thru the 1/2 hole on top, but i've never had this happen. Think it will effect the beer much?
I wanna try a 10 gal AG batch with 20.5 lbs of malt in my 10 gal cooler. So my question is with roughly 6.5 gal of strike water and the malt will there be enough room to mash and then adding sparge water? I know it'll be close, but it always seems like alot more room in the cooler to double it up.
Yep, mine blew the blowoff tube right off, the 2nd day in primary with Notti yeast. I used roasted pecans in this and I gotta say it came out oh so good! Big hit at the weekly backyard gatheringBQ! Gonna brew a 10gal batch of this today.
I just ran into this same problem. Neighbors requested I brew a Euro lager for a party without time to lager. I brewed up a All Grain 5 gal, sorta Heineken clone but used Notti dry ale yeast. Came out great.
I'm on my 2nd batch with similar recipe, actually did an all grain Heineken clone but used the Notti dry ale yeast so I wouldn't have to lager it. Very nice crispy ale that everyone thinks is a Pils. From brew day to tap out of keg in 4 weeks for a fakey Pils. :mug:
Just racked to 2ndary after 2 weeks @ 60F and the dry Notti worked out great. Had a taster and OMG this beer taste like a crispy pils with the Saaz hops. Can't wait to keg!
