    I remember listening to the Jamil show and he discussed a few Lagunitas recipes with the head brewer. I think they mash all their beers around 160F. I know it sounds a little extreme, but if you drink any of their other beers, they all have a similar sweetness to them.

    Is storing at 55 the low threshold the sugars need in order to do their job in carbonating properly before halting them at 40 degrees?

As for SDBC, it's not exactly our favorite place of all places to drink at...with that being said, this is one of the few places where us crazy drinkers can get together, bring our own beer, have half about 1/3 of the bar to ourselves...
