I picked the apples from my back yard. I cut off the bruised areas and and chopped them up. Cores, skins and all..

Then I boiled the apples until it turned to apple sauce. I used my boat motor to help..

Strained the apple sauce with a room temp pseudo sparge..

It made a very tasty cider, but only came in at 1.020 so I added 1/2 & 1/2 brown sugar and table sugar to get it up to 1.048. I added about two tsp of pumpkin spice and boiled for 10 minutes...

Chilled to 65F and pitched S-04..

Gonna do a 4 week (more or less) primary and then bulk age in secondary until mid Nov. Then I'm going to prime and bottle to have it ready for the Holidays.
