I don't think the category format works very well for this task, frankly.  Categories can't include red links, meaning there's no way to list a new hop variety without adding a stub, which clutters up the wiki and confuses your red and blue links.  In general, it's much better practice to use red links as placeholders than empty stubs.  It also makes the information easier to view on one page, which I think is more appropriate for this kind of content.  And it's no more work to add a link to a list than it is to add a category tag to a page.
