I just finished brewing Northern Brewer's sweet stout kit. The recipe includes:
.5 lb Simpsons Chocolate
.5 lb Dingeman's Debittered black
6 lbs amber malt LME
1 lb Lactose
1 oz Williamette
The expected OG should have been 1.054 and I opted for the dry yeast(Danstar Nottingham Ale).
I decided I wanted to raise the alcohol a bit so I added 1 lb Plain Dark DME. I also added another 1/2 oz of Williamette. I was expecting the gravity to be higher but it is at 1.072! Which leads me to my question. With this high of an OG will this one packet of yeast be enough? From what I have read, it seems pitching too much isn't great but it is better than not pitching enough. Any help will be appreciated.
