I am about to purchase some yeast that has a pitch rate of .75 million cells/ml/degree plato. I have read that this is a good rate for ale yeast. Would anyone know if this will be a good rate for cider fermentation? If not, does anyone have any rate suggestions. I'm also looking for a yeast that is neutral and is high flocculates.
