I was planning on making some rice wine, do I wanna use yeast nutrient? And, if so, how much?

Did some searching but I couldn't really find anything.

In my Sake I may use 1/8th tsp per gallon of Dap and a pinch or two of Morton's salt substitute for the potassium but beyond that there is not much else needed. Spoilage organisms grow so easily in the rice mash it is good to keep the nutrient additions lower than you would with fruit wines and meads.

What yeast are you using? how big is your batch?

You might think about making a starter if you are concerned about your yeast health
