i am planning on doing a shouthampton double white clone for my next brew and it calls for White Labs WLP500 Trappist Yeast. i also want to do Austin Homebrew's Belgian Grand Cru, which appears to be an Imperial Wit and uses White Labs WLP400 Belgian Wit Yeast.

what i am curious about is how much of a difference would it make if i did the Southampton first and then pitched the AHS Grand Cru on top of the WLP500 yeast cake. i imagine that since they are similar styles, it would make little difference. is this correct, or would there be a noticable difference between the two yeasts? do you think it would be worth saving $7 and getting the experience of pitching onto a yeast cake (plus saving time on a starter)?

thanks for that link. i'm just making a newbie guess that 4 means it goes best with that style and 0 means it would not compliment the style? so, i guess you meant WLP400 instead of WLP500? the WLP400 is rated a 4 for both belgian ale and belgian wit. so if i was going to re-use the yeast, i would want to use the WLP400?

I would use the wlp500 because your first recipe calls it out specifically and it also scores a 4 for Grand Cru.


Probably splitting hairs though.
 
okay, i think i/we were mixed up on the grand cru. the grand cru on the link is, i think, referring to a quadruppel since it's listed with the dubbel and tripel. but the AHS grand cru is really just a 7% WitBier (like Celis Grand Cru). but, i really needed that link more than anything.
