So I have a Wyeast package in the fridge that has been popped for about 3 weeks. Should I go ahead and make a starter with it or just leave it until I am ready? I have not had time and it was shipped popped from AHB. Thanks

I would make a start with it at least 48 hours before you are ready to brew. This will propogate the yeast nicely and it will also let you know if there is a problem with the yeast, which there probably won't be...
