Hi, I just started home brewing and I am also in graduate school. I have been toying with the idea of doing a thesis on yeast and fermentation. What I'm having trouble finding are good resources to start looking into this. Most of the journals I have free access to do not have a large abundance of information on beer fermentation and yeast. Does anyone know of any good sources I could look in to find information about the metabolic processes of fermentation and the chemical involvement of yeast in the process. I'm looking for books, journals, web sites, anywhere reliable to begin my search. Thanks for the help ahead of time.
