This will be my first try with Wyeast. So should I bring the package up to room temp before "smacking" it, or smack it right out of the fridge?

Smack it right out of the fridge and then allow to warm up to room temperature.

That's what I do... I wondered about this myself. Makes sense to let it warm up before waking but then again people pitch cold yeast with no problems.

I tried my first smack pack Sunday. I put it in a bowl of warm water to warm up and it swelled up tight in a few minutes.

The cherry wheat started bubbling in a couple of hours, and was going wide open when I left for work this morning.

Good stuff.
