Pitched proper yeast amount. Fridge is set for 68-70f
Checked in on my beer 7 hours after pitching Yeast and saw this!

Wow. Bottling day, beer fermented down to 1.000sg!
A little high for a Saison @ 7.6%

Right? I bottled a beer with Belle Saison (more or less dry 3711 as I understand) a few days ago. OG 1.046 usually gives me about 4-4.5% ABV with most ale yeasts. Nope - the yeast ate it down to 1.000 for 6.1% ABV. That's madness!
 
I need to try 3711.
I always use the Belgian Saison 3724, but am growing tired of the stall effect.
 
3711 is a beast compared to 3724. I've had a few batches look like yours as well, it's mesmerizing.
 
Wyeast Yorkshire Bitter yeast did that for me, though not quite as crazy as your video.
