I've done a dortmunder style ale with Ginger and Orange..I haven't gotten the orange to stand up yet, but the ginger does...I use a couple additions, one as a flavor and one as an aroma (at flameout) about an ounce and a half at each additon, in a hop sack.
Ginger is one of those ingredients were a little goes a long way IMHO...I've had several homebrews that were overloaded with ginger and it wasn't always a pleasant experience.
No, never brewed with it. I did use Mi-Del gluten free ginger snaps for a pumpkin pie crust on Thanksgiving and it was about the best pumpkin pie I've ever made. My oldest son is dairy and gluten allergic, and I made the pie with Silk soy creamer instead of evaporated milk.
