I can get 25' of 3/8" copper tubing at a hardware shop nearby.

Is that enough you think? Or do I need more?

In Ontario, I'm guessing you've got pretty cool tap water, and all the better if you're using well water. Assuming your water stays cool year 'round, your 25' will do the job. In warmer climes like Tampa, where the tap water's never cold, we need all the help we can get so I went with 50'.
 
I have a 3/8" x 25' stainless IC. Last I brewed, I got a 5 gal boil down to 70° in about 14-15 minutes w/ garden hose water that runs about 68°.

Can't imagine there's a great deal of difference in cooling capacity between Copper and SS.
