Has anyone tried this yeast (German Bock Lager) in a steam beer? I am about to rack a doppelbock and am planning a steam beer next, so was thinking of repitching this yeast. I realize that I'd probably end up outside of the BJCP guidelines, but will not be entering this into competition.

The main issue I see is that the high end of ferm temps recommended by White Labs is 55, and I'd probably shoot for a temp of 60-62 for this type of beer.

Otherwise, I won't be brewing a lager for a while so will probably just dump the yeast and start with a fresh vial of something more true to style.

I would try just a bit cooler then you planed to make sure the yeast cleans it up a bit. If its not right when its done try cold conditioning it to see if it cleans up more. I would love to try something like this!
