I'm not complaining about it. It's more of an observation. This yeast is slow. My hefeweisen fermentation started up quickly, ramped up slowly too. I had the airlock on for 3 days before I needed to replace the airlock with the blow-off. Two days after connecting the blow-off I switched back to the regular airlock. It's slowing down now, but it's still going steady.

I'm loving the aromas this yeast is putting out. I'm smelling the most wonderful banana bread aromas. This is my first go with this yeast and I'm really looking forward to the results. For anyone interested, this is the temp schedule I've allowed for thus far.

Pitched a liter of starter at 65F
Slowly cooled to 60F for first 3 days
Once the blow-off was connected I allowed the temp to raise to 68F for the next two days
Once the regular airlock was put back on I raised the temp to 70F, where it remains.
