This weekend I will brew an Arrogant Bastard clone with WLP007. I have a gallon of cider (no sorbates) that I would like to ferment and thought about tossing in some of the WLP007.

How will a beer yeast work with a cider - good, bad, or ugly?

What is the typical gravity of a cider and how much sugar should I add to get the gallon batch up to 1.060 or so?

It should work great. I often use Nottingham, Safale and California Ale for ciders.

Commercial juice/cider is usually around 1.050, you will have to measure yours to be sure. Brown sugar, honey, and table sugar all work well to boost your SG.
