I have an IPA going right now with this yeast and was planning to experiment with adding Saison strains to it after this current batch is done. Belle Saison first, and then another with WY 3724. I was just thinking, however, that I'd like to get a baseline of what it tastes like on its own without other strains and pungent hops in the way. Looking online, I can pretty much only find information on IPAs and Saison blends with it.
Before I play with the Saisons I was thinking I would pitch it into a simple wort of Pilsner, Vienna and late additions of Mt. Hood to get an idea of its character. Has anybody done something similar with this yeast? How does it taste on its own?
