Wine conditioner advice

Just made two 1 gallon batches of mead.

Extremely new to brewing so I'm sure to be seeking advice from everyone from meads, brew, and quite possibly kombucha.

1. How much conditioner should I add to 1 gallon of mead prior to bottling?
2. Is conditioner something I can add during my 2nd Fermentation?
 
Wine conditioner is sugar with some potassium sorbate added to prevent refermentation. Use it to taste for the level of sweetness you want at bottling time. The mead should be totally finished fermenting and racked clear of any lees before adding it. If you use less than 2 oz per gallon you'll want to add an additional little bit of potassium sorbate to insure it doesn't restart fermenting.
