Brewed with my brother-in-law two Saturdays ago. His first time. Used some LME he got for Christmas along with some new equipment he got at the same time.

5 gallon batch

3.3 lbs LME Wheat
3.3 lbs LME Maris Otter

1 lb roasted barely steeped 10 minutes at 155 deg

45 minute boil
0.50 oz Willamette pellets 45 minutes
0.25 oz Perle pellets 30 minutes
0.33 oz Fresh (from his friend) willamette 15 minutes

Safale US-05 @ 68 deg

A few questions:
He'd like to have it ready to drink by Halloween. It will be bottle conditioned. What is the latest day we could bottle? Ideally if FG is stable by this Saturday we'd bottle then but it'd be nice to have a last resort day. (He texted me saying airlock has slowed to once a minute)
And lastly, will the brew be tasty?

If it's been two weeks it should be done. Air locks are not an all tell sign. It should already be done with the 05 yeast. I would bottle right now and condition two weeks and then put in fridge for two weeks and drink on Halloween.
 
Yeah, 2 weeks at 68F... US-05 is done. Halloween is no problem (that's four weeks out).

Just make sure to bottle and keep the bottles warm... don't rush them into the fridge.
 
Last, pretty much "for sure" date to bottle to be ready for Halloween, is 21 days prior. They may condition a little quicker, but to be sure... At 2 weeks you can probably bottle now which will give you 4 weeks for bottle conditioning. I would try one a week before Halloween, if good, refrigerate what you want for Halloween a couple days before. Of course once they are fully conditioned you can cool all of them and drink at your leisure.
